Abstract: | Bakery industry in Ukraine is one of the leading food industries. Part of the population of Ukraine in the bread ration adds up to 15%. The rate of consumption for the average citizen is 101 kg of bread and bakery products a year. Every year in Ukraine produces about 2 million tons of bread and bakery products, in excess of 70% of the total bake large industrial enterprises, and the rest -. Private bakeries, trade network, large supermarkets and other manufacturers. Currently, the amount produced of bakery products fully meets the needs of the population of Ukraine. Further development of bakery industry should be implemented on the basis of the introduction of the latest technology and innovation, increase the production of bread and bakery products with different flavors and properties of the bread improvers, enhancing their quality and biological value for the consumer. Object - innovation in the bakery industry. Subject - innovations to enhance product quality. |
